Just around the corner of where I live, people line up for oliebollen, the Dutch national heritage snack for the last day(s) of the year. The neon lettering of the cake stall uses lettering for the name of the owners’s family: Huijbregts. The big type in Balloon says “Hollands-Gebak” (“Dutch pastry”) with, for reasons unknown, a hyphen between the two words.
